They're back! I'm not talking about a poltergeist; I'm referring to the fannny pack. Yes, Ladies, we are back in the '80s again. To be honest, I thought I would never wear a fanny pack or leg warmers for that matter, but gosh, these are so convenient to take to the gym or hiking. They have been renamed "The Belt Bag." I personally love the one from Lululemon. I toss my phone and air pods into it, and off to the stair stepper I go. I love it so much, I have purchased one for each of my daughters.

October is Breast Cancer Awareness Month & as a daughter who lost her sweet mom to breast cancer 7 1/2 years ago, please educate yourself on early detection. Did you know that 1 out of 8 women will be diagnosed with breast cancer in her lifetime? I have had way too many friends diagnosed and my dearest friend, my mom, affected by this type of cancer. So, ladies, get your mammograms & educate yourself on the national breast cancer link above.

For the month of October, I love this nail polish from Essie and it is part of the breast cancer awareness collection. It is free of toluene, formaldehyde, and DPB. My absolute favorite color is pink. It has always been as far back as I can remember and it is also my eldest granddaughter's favorite color, too. Not only is it pink but it has sparkles, too. What's not to love about that combination?

I love anything pumpkin! So with the Fall season approaching I like to review some things I know I am going to want to prepare for the holidays. One of my favorite desserts is the Pumpkin Roll. Basically a moist pumpkin cake wrapped around a delicious cream cheese filling with a dusting of powdered sugar. It looks more difficult than it is. Once you get the rolling method down, it is a "piece of cake". Literally!













Blend first 5 ingredients. Add dry ingredients that have been mixed together and mix thoroughly. Lay parchment paper on a 10 X 15 jelly roll pan or cookie sheet with sides making sure you leave extra paper hanging over the 2 short ends. Spray the parchment paper with non stick cooking spray. Spread the batter on the parchment paper and bake in a 375 degree oven for 15 minutes. Remove from oven and let cool to a warm temperature but do not cool completely. When you are able to handle the cake, slowly grab the edges of the parchment paper and roll loosely with the parchment paper folding in with the cake. Let cool completely at this point and prepare the filling.

Blend cream cheese, butter, powdered sugar and vanilla. Refrigerate until ready to use.

When the cake is cooled, gently unroll and spread the filling. Roll the cake again while removing the parchment paper but roll it closer together so the cream cheese will fill the gaps.

Refrigerate for up to a week. It can also be frozen ahead to be prepared for guests that show up for the holidays. They will be impressed with a slice of this deliciousness.

With temperatures cooling, there’s nothing better than an easy Instant Pot soup or stew for weekday dinners. Don't own an Instant Pot? No worries, this Instant Pot Keto White Chicken Chili can also be prepared in a crock pot. Click here for the full recipe. I’ve made this super simple recipe several times and it has become a family favorite. The main ingredients are chicken thighs, chicken broth, canned tomatoes, canned green chiles, frozen cauliflower rice and cream cheese. Even if you’re not a Keto diet fan, you will still love this recipe and if you don't know about Keto, check out our previous post. All of your family members will enjoy it and you can always add some crusty French bread and a salad to serve with it. If you’re not a fan of cauliflower rice, you can substitute regular prepared rice. Although this recipe is referred to as "chili", it's actually more of a creamy soup. Just ladle it out in soup bowls, squeeze a slice of lime and top with cheese, avocado slices and a dollop of sour cream. The lime really makes it tasty! This is delicious for a crisp and chilly autumn night.
